why people prefer water-cooled v8 instead of air-cooled?
why people like water-cooled v8?

In the real world probably because the waterjacket is sound deadening. Also because cooling all 8 cylinders evenly with air is quite difficult. Air cooling is more suited to rear engined, as per the Tatra V8, to get through cooling as opposed to front end where the air would be blocked by the bulkhead.
In the modelling world probably because there are more V8's in the real world.
