Welcome to HMEM moecorlin.

Stainless Steel is a very "gummy" metal to work with.
Tooling to work it is specfic.
It is harder than mild steel but has the cutting properties
of copper or aluminum. Then things turn STRANGE!
Stainless will "work harden" very quickly.
It's a lot of chemical/physics mumbo jumbo from there.

Bottom line is SS does require special tooling and disks.

MOe, as regards cut-off wheels, INOX is not a recommendation, just a brand name.
I know stainless steel is often called INOX in europe, but any cut-off wheel will do.
I recommend however, that you stick to well known brands and use the 1MM wheels.
I've cut and welded quite a lot of SS, mainly 316, also machined quite a bit of it.
I've never had a problem with contamination from "name" branded abrasives.
