I bought a Sanderson Beam engine from the UK a few months back. I plane to keep the restoration as close to the original as possible. I need to re-mount the stone work and don't know what "cement" to use.
 
I would leave it the way it is.
Kind of adds some realism to it.
 
I wonder if thin-set tile cement would do well. It is very 'squish-able" so you could apply it and mash your broken part back into place.

I'd use epoxy cement for the large fragment and make a "dirty plaster" to smear into the cracks between segments.
A very small amt. of graphite powder from a pencil may tone down the white color of the plaster.

Good thing about using plaster is you can make a loose mix and can wash off excess even from the textured surface of the tiles.
 
Lowes sells an excellent called LEXEL, it bonds stone to wood very well. A small tube is inexpensive and goes a long way. Find it in the adhesives/calk area.
