What kind off pressure gauges should (and should not) be used for steam?
I'm guessing all stainless or non-ferrous internals.
Dry or liquid filled? (I see the recommended operating temp range for glycerin filled gauges is 40-140F.)

Most if not all pressure gauges are made from non-ferrous materials. The bourdon tube, that's the bit that tries to straighten out as the pressure inside it rises and thus moves the pointer, is usually made from thin hard copper sheet and is soft soldered. That's why it should never see steam because steam under pressure may have enough temperature to melt the solder! Steam at 100 psi is 163 C - hot enough to melt most soft solders!
